Ingredients

  1. 1 lbcooked chicken breast or rotisserie chicken, shredded
  2. 1/2 cupred onion, diced
  3. 1/2 cupsweet apple, diced (red or green)
  4. 2/3 cupgrapes, quartered or halved (red or white)
  5. 2/3 cupdried cranberries (or craisins)
  6. 1/2 cupchopped walnuts (or nut of choice)
  7. 2/3 cupplain 2% Greek yogurt
  8. 2 tbspfresh lemon juice (or more to taste)
  9. 1/2 tspgarlic powder
  10. salt & pepper
  11. 6 mediumlettuce leaves

Steps

  1. 1

    In a large bowl, combine all ingredients. Mix until well combined.

    Using a 3/4 cup measuring scoop, portion out the chicken salad onto lettuce leaves.
