  1. Crust
  2. 1 1/2 cupgraham cracker crumbs
  3. 1/4 cupbutter, melted
  4. 1/4 cupbrown sugar
  5. Filling
  6. 24 largemarshmallow
  7. 1/3 cupfresh lemon juice
  8. 1grated rind of 1 lemon
  9. 6drops yellow food coloring, if desired
  10. 1some pieces of marshmallow, for garnishing
  11. 250 gramscream cheese
  12. 1 cupwhipping cream, stiffly beaten

    Combine crumbs, sugar and melted butter together. Press to fit plate snugly. Bake at 170ºC (350ºF) for 20 minutes. Set aside.

  2. 2

    In a saucepan, heat marshmallow, lemon juice, rind and water, stirring constantly until marshmallows are melted. Add food coloring. Chill until mixture mounds slightly when dropped from spoon. Fold in whipped cream. Pour into baked crust. Chill until set 3-4 hours.

    Garnish with marshmallows and broil until brown. Serve cold, share and enjoy.
