Mom's Fried Shrimp Recipe

My mom made this for the family growing up. It was our favorite, especially when it's fresh. Serve with your favorite condiment. Mine is sweet chili sauce, ketchup, or mayonnaise.

Tips: Tom chien flour can be bought at asian grocery stores. It is translated as shrimp fry flour. You might find that it is sometimes packaged as "Bot Tom chien & chuoi".. Which means shrimp and banana flour, because this can also be used to fry bananas. ;) I've included an image in the directions of what the bag looks like.

Also, they sell active dry yeast in little packets. Usually comes in 3 or more. You can use one packet if you buy these.

Ingredients

  1. For Batter
  2. 2 lbLarge shrimp, peeled and headless
  3. 1 1/2 cupWarm water
  4. 1 packagesTom Chien/Chuoi flour (shrimp/banana flour in asian stores)
  5. 3/4 tspactive dry yeast
  6. 1egg white
  7. 1 tbspmelted butter
  8. 1 tspsalt
  9. 1 tbspvegatable oil
  10. For Shrimp
  11. 2 clovegarlic, minced
  12. 1salt as needed
  13. 1pepper as needed
  14. 1sugar as needed
  15. 1vegetable oil for frying
  16. 1 bagpanko breadcrumbs

Cooking Instructions

    Heat oil to 375°F

    Peel shrimp and cut slits on the stomach of the shrimp to prevent curling. Wash and pat dry.

    Sprinkle sugar, salt, and pepper, and minced garlic on shrimp, mix well.

    Take tom chien flour and dump in a large mixing bowl. Add salt, egg white, active dry yeast, butter, vegetable oil, and water. Mix well until a batter forms. The batter should be slightly thick but easy to work with when dipping the shrimp.

    Pour panko powder in a separate bowl.

    Dip shrimp in batter, making sure there isnt a lot of "hanging batter". Then dip in panko breadcrumbs. Cook in fryer for exactly 2 minutes. You will need to cook in batches. Transfer fried shrimp to a tray/bowl lined with paper towel to absorb extra oil.

    Serve with your favorite condiment. I like ketchup, sweet chili sauce, or mayonnaise. Enjoy!
