Cut bacon into medium pieces (remember bacon shrinks when cooking) and put it in a large pot over medium heat and let it crisp until bacon is fully cooked.

After bacon is to a crisp, remove from pot and set aside. You will use this later after rice is fully cooked. With the same bacon grease in the pot, pour in the rice,water and salt. Bring to a boil, when water is almost evaporated, lower the temperature and stir the rice and cover it for about 15 minutes then stir it one more time until the rice is done.
