Brad's roasted salsa verde
this is always a hit at every party.
Cooking Instructions

Husk and rinse tomatillos. Cut in half. Put in a lg baking dish. Add onion garlic and peppers with the tops cut off.

Drizzle olive oil over all. Bake at 350, 35-40 min. Stir every 10min. Cook until tomatillos are soft and everything has a good char

Remove from oven and let cool. When cool add all from baking dish including juices to a blender. Blend add cilantro and blend until smooth.

Remove to a bowl. Add rest of ingredients and mix. Chill and serve.

I found some mysterious looking tomatillos in the supermarket and used them to make this green salsa. I prefer green salsa over red salsa and tried many ways to get this recipe right. I tend to buy my salsa but wanted to taste some homemade stuff just this once.Of course you can use jalapeño peppers rather than Serrano chili peppers if you'd prefer. You can also make this salsa entirely with raw vegetables. I always boil my vegetables but there's not really a reason for it, it's just something that I have always done.
