Ingredients

  1. 1 lbvery lean ground Beef
  2. 1/2 cupmozzarella (light)
  3. 2/3 cupRicotta part skim
  4. 1/4 cupmixed Italian shredded cheese
  5. 4 smallTinker bell peppers red,orange, yellow,&green
  6. 1/4onion, chopped
  7. 1 tbspminced garlic
  8. 1/2 tbspItalian herb seasoning
  9. 12fresh Basil
  10. 1 tspDried Basil
  11. 2 cupmarinara
  12. 1 largeZucchini
  13. 7whole wheat Lasagna or Gluten-free noodles
  14. 1/2 tspolive oil, extra virgin
  15. 1 9x9 Pyrex deep dish

Cooking Instructions

    In a large pan brown your beef add the dry seasonings a Lil salt and pepper to taste

    Drizzle a tiny bit of olive oil after 10 min and add in your peppers and onion sauté till beef is cooked .don't over cook it or the veggies while this is cooking slice your zucchini long ways into thin Strips equal to the pasta.

    In another pan or pot have some water boiling add a bit of oil and salt then add your noodles being careful to pull them when they are aldente (not limp)

    In the Pyrex add sauce to the bottom and spread out evenly then a layer of pasta one will be cut in half to fit

    Then add half the beef mixture ,then mozzarella then zucchini Strips then sauce again spread out evenly. Then add a layer of Ricotta spread it out.

    Then italian mixture. Then beef again then sauce then the last 3.5 noodles then sauce and sred all remaining cheese over the top.

    Bake at 375°F for 25 min

I'm a Chef now after being in the Bar business for over 30 yrs. I always loved cooking for my family and friends and I got my cooking chops at the Hilton hotel in Odessa,TX about 23 yrs ago when I volunteered to help out in the kitchen after our staff walked out on a strike! In one week I was offered a position to be his apprentice and recited my Certificate in 11 months! I went on to do catering for the next 18 yrs!
