I grew up with my mom making this with leftover mashed potatoes often. It is ridiculously simple, but so tasty! I'm not a fan of celery so I have it listed as optional because I never use it (I do add extra celery seed though).

Ingredients

  1. 2 cupscold mashed potatoes
  2. 2hardboiled eggs - chopped to 1/4 inch pieces
  3. 1/3 cuponion - chopped to 1/4 inch pieces
  4. 1/4 cupcelery - chopped to 1/4 inch pieces (optional)
  5. 1/4 cupMiracle Whip or Mayonnaise
  6. 2 tbsSweet relish
  7. 1 tbsyellow mustard
  8. 1/4 tspcelery seed (optional)
  9. to tastesalt and pepper
  10. Paprika for garnish (optional)

Cooking Instructions

  1. 1

    Put everything in a medium sized bowl with an airtight lid. Mix gently until fully combined.

    Cover. Refrigerate 2-4 hrs. Sprinkle with paprika before serving if desired. Enjoy!

    NOTE: This really is best made with Miracle Whip due to the extra seasonings it contains. If you use mayo try adding 1 tsp sugar and 1 tsp apple cider vinegar as well to get a more "tangy, sweet zip"

I'm diabetic have to watch my protein, phosphorus , and potassium and i can't have salt and no dairy products. can i still make mashed potato salad and macaroni salad?
