Ingredients

15 mins
8 servings
  • 6 cupvegetable or chicken stock
  • 3/4 cupbarley
  • 2carrots, diced
  • 1onion diced
  • 2stalks celery diced
  • 6links of chicken, turkey or pork italian sausage (sweet, mild, or hot)
  • 1bay leaf
  • 1/2 tbspitalian seasoning
  • 3kale leaves
  • 1salt and pepper to taste
  • 1parmesan cheese to taste
  • 2 cupwater (as needed)

Steps

  1. 1

    Add all ingredients except for kale, sausage and parmesan cheese and water

  2. 2

    Empty sausage out of casings a piece at a time to resemble tiny meatballs. Brown them in a frying pan if you wish first. I never have time to do this so I just drop them in the crockpot raw

  3. 3

    Cook on low for 6-8 hours or high for 4

  4. 4

    About 30 mins before serving taste soup and add water if too salty or too thick, and add chopped kale to crockpot

  5. 5

    Add salt and pepper to taste and garnish with parmesan cheese
