Ingredients

  • 2 largechicken breasts
  • 500 gramsstreaky bacon
  • 1fresh sage leaves
  • 250 gramsmozzarella cheese
  • 1olive oil, extra virgin
  • sea salt
  • ground black pepper
  • 500 gramsgreen beans
  • 6ripe truss tomatoes
  • dashsoy sauce
  • dashwhite wine
  • tbspcrushed garlic

Steps

    Butterfly the chicken breasts

  2. 2

    Roughly chop a handful of sage

  3. 3

    Grate mozzarella

  4. 4

    Combine sage, mozzarella, olive oil, salt, and pepper to make a stuffing

  5. 5

    Stuff chicken breasts with mozzarella mix

  6. 6

    Wrap each breast in bacon so strips overlap

  7. 7

    Bake for 20mins at 200°F (C), or until liquid runs clear

  8. 8

    Finish under grill for 5 mins

  9. 9

    Make a side dish!

  10. 10

    Bake tomatoes and beans in a casserole dish with sea salt, crushed garlic, pepper, and a dash each of soy, wine and olive oil.

    Slice the bacon-wrapped breasts at table and serve family-style
