I DON'T like tomatoes at all!! But we grow them in our garden so I had to come up with a way that I could eat them. These taste really good, even if you don't like tomatoes!

Easy oven roasted roma tomatoes

I DON'T like tomatoes at all!! But we grow them in our garden so I had to come up with a way that I could eat them. These taste really good, even if you don't like tomatoes!

Ingredients

  1. 1As many halved Roma's as you can fit on a baking sheet
  2. 1Enough Olive oil to drizzle liberally over tomatoes
  3. 1Sea salt, to taste
  4. 1Fresh ground pepper, to taste
  5. 1Onion powder, to taste
  6. 1Balsamic vinegar, optional
  7. 1Sprinkle of Italian seasoning. Optional.

Cooking Instructions

    Heat oven to 200° F.

  2. 2

    Cut tip ends off of tomatoes, then slice in half. Place on baking sheet cut side up.

  3. 3

    Drizzle sliced tomatoes liberally with olive oil.

  4. 4

    Sprinkle with sea salt, fresh ground pepper & onion powder.

    Bake for 2-4 hrs until tomatoes are semi dehydrated. More or less depending on how you like them.

    Sprinkle with Italian seasoning at the end to add a nice flavor. Optional....but GOOD.

  7. 7

    Drizzle a bit of balsamic vinegar about 1/2 way or at the end of baking. Vinegar is optional but gives a bit more depth of flavor.
