Okonomiyaki - Hiroshima style

Okonomiyaki is one of the very well known Japanese food from the Kyoto region. However in Hiroshima the method of preparation is different. The Hiroshima method preserves the taste of every single ingredient and that makes it much better for me than the Osaka method. However it is very hard and requires skill to get just one serving done. I hope you will have fun experimenting. Enjoy!

In a bowl, mix your flour and water. The consistency should be so fluid like water.

For the vegetables, make sure they are well washed and nicely chopped or grated for carrots.

Preheat your pan, add some cooking oil then pour your flour mix. Before it hardens season with salt and pepper.

Next add cabbage and carrots then pour some batter on top then season with salt and pepper. Add minced meat then Flip to cook the vegetables and minced meat.

On the side break an egg and spread to same size as your batter. Then carry the whole vegetables and minced meat stack and place onto the egg while the egg is still wet on top.

Flip then season with salt and pepper. Serve with the egg side up.
