Heat oil in a pan, and tip in the asafoetida, mustard seeds and fenugreek sheeds.

Add whole red chilli, curry levels, crushed ginger garlic, as soon as the mustard seeds crackles.

After a few seconds add the pumpkin cubes too. Toss and mix.

Add the salt and turmeric powder and red chilli powder and keep toasting and mixing. Lower the flame and cover, cook coved till the pumpkin is soft but not mashed.

Pour in the tamarind water and cook covered for another couple of minutes. Serve hot with chapati or puri.
