I have absolutely no complaints, first time making these and it was on a whim, got a little creative and this was the outcome. I was inspired by those little amish hashbrown cakes only thing I didn't use was egg. I defiantly am cooking this again:)

Ingredients

  1. 2 largeRussett baking potatoes
  2. 1 cupVegetable Oil (have an extra 2 Tbl off to the side)
  3. 2 tbspOnion powder (or if you prefer 1/2 cup fresh white onion cut finely)
  4. 1 tbspGarlic salt (adjust to taste)
  5. 1 dashDried parsley
  6. 1/2 cupWhite flour
  7. 1/3 cupYellow Cornmeal

Cooking Instructions

    Preheat oven to 325°

    Wash and dry potatoes

  3. 3

    Wrap in tin foil and set on baking sheet. Re-adjust oven temp to 350°

  4. 4

    Bake for 30-40 minutes

  5. 5

    Peel back the foil a stick a fork in the potatoes to make sure they're cooked. If they're done take them out and set to the side to cool

  6. 6

    Once cooled down remove the peels and cut potatoes into desired size (do not mash)

    Toss flour, cornmeal, garlic salt, onion powder, and parsley in a big bowl with potatoes. Drizzle that 2Tbl of oil you had off to the side and toss everything together making sure to evenly coat the potatoes

    Heat remaining oil in frying pan (medium to high heat)

    Your potato pieces should have taken on a round "ball" shape. Toss these in frying pan and cook til golden brown

    Drain and pat excess oil off and serve hot. Perfect for breakfast or as snack with buttermilk ranch
