Ingredients

  1. 1 cupFOR PANCAKES: maida/ all purpose flour -
  2. 1/2 cupCurd/dahi -
  3. 2/3 cupWater -
  4. to tasteSalt
  5. 2FOR STUFFING: Boiled potatoes -
  6. 1/2 cupOnion (chopped) -
  7. 1/2 teaspoonGinger garlic paste -
  8. 1 teaspoonRai/ mustard seeds -
  9. 1 tablespoonOil -
  10. 1/2 teaspoonRed chilli powder -
  11. 1 teaspoonAmchoor/dry mango powder -
  12. to tasteSalt
  13. 1/2 teaspoonGaram masala -
  14. 1 tablespoonsChopped coriander -
  15. 1/2 teaspoonEno -
  16. 1/2 teaspoonBaking powder -
  17. 2 tablespoonsButter -

Steps

  1. 1

    Mix together maida, curd, salt, eno, baking powder and water. Make a lump free batter.

  2. 2

    Heat oil in a pan. Add rai to the oil. When rai starts to crackle, add ginger garlic paste. When ginger garlic paste becomes light brown, add mashed potatoes and all spices to it.

  3. 3

    Saute for 2-3 minutes. Add chopped coriander. Let it cool. Make flat balls of it.

  4. 4

    Put a nonstick pan on gas. When the pan is heated, put some butter. Spread 2 tablespoons of pancake batter. Put the stuffing flat ball and spread another 2 tablespoons of pancake batter on it. Shallow fry both side till golden brown.

  5. 5

    Delicious Stuffed pancakes are ready to be served with chutney or tomato sauce.
