Finely chop the chives and scallions. Shred the cabbage, mix with salt, and squeeze out excess water.

Add the seasonings to the ground pork and mix well.

Add the chives and mix thoroughly.

Add the squeezed cabbage and mix until combined.

Refrigerate the filling for 1 hour to let the flavors develop.

Spoon the filling onto the dumpling wrappers and fold to seal.

Shape the dumplings however you like—round or flat, it's up to you.

Boil the dumplings for 6 minutes, then remove and serve.
