This quick orange cake is delicious even without the orange glaze.
Cooking Instructions

Heat the oven to 180°C. Grease and base line a 22cm round cake tin.

Beat the butter and sugar in a mixing bowl until light and creamy. Add the eggs, pinch of salt and orange extract and beat well.

Stir in the flour, frumina until blended. Add orange juice, to give a soft dropping consistency. Stir in the baking powder and mix well.

Pour the mixture to the prepared cake tin and bake for 40 minutes until risen and golden. Remove from the oven and place on a wire rack to cool.

For the orange glaze, sift the icing sugar into a bowl and gradually stir in the orange juice until smooth. Pour the glaze over the cake and smooth level with a palette knife. Leave to set.

This is a found recipe so I can only claim credit for the whipped cream dollop and mint leaf, though I have been known to serve it with raspberry puree as well. Oh, the original recipe called for self-raising flour instead of APF but I only have APF so I have included the baking powder and salt; if you use self-raising flour, do NOT add the salt or baking powder. This is like a variation of the Orange Yogurt Pound Cake recipe (ID:566906), but I decorated it so it could also be used as a eyecatching gift.Since the whole orange including the peel is used, it's best to use chemical-free oranges.
