Vietnamese Braised Tilapia in Clay Pot (Cá Rô Phi Kho Tộ)

Marinate the tilapia with fish sauce, sugar, black peppercorns, ground pepper, minced garlic and shallots, and pork fat or oil. Let it sit for 1 hour so the flavors absorb and the fish firms up. (Use a clay pot if you have one!)

Place the pot on the stove and bring to a boil. Skim off any foam. Add just enough caramel sauce for color, julienned ginger, and sliced chili peppers. Let it boil briefly, then reduce to very low heat, cover loosely, and simmer gently. When the sauce is almost reduced and thickened, taste and adjust with more fish sauce, sugar, or MSG to your family's preference.
