Spaghetti Aglio Oglio
Quick and delicious. A classic yet simple dish.
Cooking Instructions

Chop chilli, spring opinions and garlic all into fine pieces and add to oil in a pan

Cut bacon into lardons and cook until browning gently
- 3
Boil spaghetti in slightly salted water with a splash of oil
- 4
Heat pan containing chopped chilli, garlic and onions. As garlic starts to colour, add chicken stock. Reduce to a gentle heat.

Add bacon to oil/stock mix
- 6
Keep checking spaghetti until al dente - do not over cook
- 7
Drain spaghetti and add to pan
- 8
Add half the parsley and toss to thoroughly coat pasta with sauce
- 9
Serve immediately garnishing with remainder of parsley and parmesan if required

I made this because I wanted to master a really basic cooking technique.I was able to make it tasty without adding artificial flavoring, soup stock granules, or konbu based dashi stock. If you crush the garlic with your knife rather than mincing it, it will be soft and fragrant. Make sure not to burn the red chili peppers. The biggest key is to emulsify the oil.
