Forest curry is a curry that I came up with by taking the traditional kao soi curry and gave it a fresher twist. It still contains a dried chili that gives it that authentic smokiness that almost every curry has in Thai cuisine. Anyways, let's get started!

Ingredients

No cooking
2 - 4 servings
  1. 2 tspcoriander seeds
  2. 5fresno or red jalapeño chilies
  3. 1/4 tspcoarse salt
  4. 1dry guajillo chile
  5. 1 tspblack cardamom seeds
  6. Bottom half of lemongrass, peeled and de-rooted
  7. 1habanero chile
  8. 1/8 cupcilantro stems
  9. 8rounds of fresh ginger
  10. 1/4 tspdry turmeric
  11. 1/4 cupred onion or shallots

    Soak your guajillo chile in water for 30 minutes to an hour. Now, get your mortar and pestle and grind your coriander seeds and cardamom until it is powderized then move to a seperate bowl. Afterwords, slice your lemongrass into thin rounds then pound it into a paste. Now, add in all your chilies, shallots, and ginger and pound it with your salt. Put in your spices along with the turmeric. Enjoy using this paste to make your forest curry. 😊
