cook potatoes until almost done

drain and cool slightly, peel, cut into slices 1/2 - 1" slices.

fry bacon until crisp. use slotted spoon onto paper towels.

add bacon to potatoes.

pour off excess grease. turn to med heat, add olive oil, brown onions.

add sugar, flour, salt, paper, water and continue cooking until dressing begins to thicken, 3 - 5 min.

add vinegar, minced parsley.

cook 1 min longer. taste and adjust seasoning.

pour dressing over potatoes and toss gently.

garnish with chopped parsley and serve immediately.
