Ingredients

  1. 2 tbspEVOO
  2. 1 lbYellow onions, coarsely chopped
  3. 1 lbSweet Italian sausage, remove from casings
  4. 4 lbBeef chuck, ground
  5. 1 can(12 oz.) tomato paste
  6. 1 1/2 tbspminced garlic
  7. 1/3 cupground cumin
  8. 1/2 cupchili powder
  9. 1/4 cupDijon mustard
  10. 2 tbspdried basil
  11. 2 tbspdried oregano
  12. 1 1/2 tbspsalt, or to taste
  13. 1 1/2 tbspfreshly ground black pepper
  14. 3 can(28 oz each) Italian plum tomatoes, drained
  15. 1/4 cupdry red wine
  16. 2 tbspfresh lemon juice
  17. 1/4 cupchopped parsley
  18. 2 can(16 oz each) dark red kidney beans, drained
  19. 2 can(5.5 oz each) pitted black olives, drained

Steps

  1. 1

    Heat olive oil in very large pot. Add onions and cook over low heat, stirring occasionally, until wilted, about 15 min. Add sausage meat, ground chuck; cook over medium-high heat, stirring, until the meats are well browned. Spoon off any excess fat + discard.

  2. 2

    Stir in the tomato paste, garlic, cumin, chili powder, mustar, basil, oregano, salt and pepper. Add the tomatoes, wine, lemon juice, dill, parsley and kidney beans. Stir well and simmer, uncovered, for another 15 minutes.

    Taste and adjust seasonings. Add olives; simmer for 5 minutes more to heat through. Serve immediately.

    Per serving: 260 calories, 19 g carb, 26g protein, 10g fat, 55 mg cholesterol.
