Using a stand mixer with the whisk attachment, mix the very soft butter, eggs, and sugar together.

Add the flour, almond flour, and almond extract. Mix well.

Add the melted chocolate and mix until combined.

Peel the pear and slice it thinly.

Pipe or spread the chocolate almond cream onto the first pastry round, place the fève on top, and cover with the sliced pear.

Place the second pastry round on top, sealing the edges well with a little water.

Apply the egg wash in two steps. Brush the galette with the egg wash and refrigerate for 20 minutes. Brush a second time, then score the top with a knife. Make a few small holes to let steam escape during baking. Place in the freezer while you preheat the oven.

Preheat the oven to 400°F (205°C).

Bake for 30 minutes.
