Boil the sweet potatoes and then peel and grate them.

Now roast them in 1 tablespoon pure ghee.Once cooled down, add gratted jaggery, cardamom powder and chopped dry fruits and mix well.

Sieve flour and add 2 tablespoon refined oil and give moyan. Add water and make a fine dough. Cover for 10mins and keep it aside.

Take small portion of the dough and roll it into small puris, now add flour and water mixture onto the corners and add the sweet potato and jaggery stuffing.

Now give it shape into ghujiya mould. Take a wok and heat oil and now fry the ghujiyas on low flame.

Your ghujiya is ready, serve hot and enjoy.
