
Avocado Pasta Salad

In a large pot, cook the noodles in boiling water til al dente. When noodles are at the desired softness strain and rinse with ice water. Set aside.

Cut the avocados in half and remove the stone. Slice into 1/4 in. cubes with out slicing the skin. Using a spoon, scoop out the fruit and put on top of the noodles. Sprinkle lemon juice over the avocado so it doesn't brown.

Slice cherry tomatoes in half, slice mushrooms and cucumbers to 1/8th thickness, chop up green onions and cilantro (to your taste). Put in with avocado and noodles.

Pour Italian dressing over ingredients, tossing until coated. Refridgerate.
