Ingredients

2 hours
8 servings
  • 1 lbcooked pasta, chilled
  • 5roma tomatoes, diced
  • 1cucumber, seeded and diced
  • 2bell peppers (any color), diced
  • 4scallions, sliced thin on the bias
  • 1chopped parsley, if desired
  • 6 ozfeta cheese, crumbled
  • 2/3 cupsalad dressing (Italian, Greek, etc.)
  • 1salt and pepper, to taste
  • 1basil and red pepper flakes, to taste
  • 4 ozblack olives, sliced

  1. 1

    Cook pasta in salted water. Drain.

  2. 2

    Meanwhile, chop all veggies.

  3. 3

    Add pasta and all ingredients to large bowl and stir to combine.

  4. 4

    Chill several hours to let flavors meld. Stir occasionally to redistribute dressing.
