Ingredients

  1. cake
  2. 2 cupsifted flour
  3. 2 cupsugar
  4. 1 stickbutter
  5. 1/2 cupshredded coconut
  6. 5egg whites
  7. 5egg yolks
  8. 1/2 cupolive oil
  9. 1 cupbuttermilk
  10. 1 1/2 tspvanilla
  11. 1 tspbaking soda
  12. icing
  13. 8 ozcream cheese
  14. 1/2 stickbutter
  15. 1 tspbuttermilk
  16. 1 tspvanilla
  17. 1 tspcreme de cacao
  18. 8 ozpowdered sugar

Steps

  1. 1

    preheat oven to 350°F

  2. 2

    grease and flour 3 9-in round pans

  3. 3

    cream butter with sugar, then add vanilla

  4. 4

    add egg yolks and olive oil. beat until fluffy

  5. 5

    in a separate bowl, combine sifted flour and baking soda

  6. 6

    add dry ingredients to mixture a little at a time, alternating with the buttermilk 1/4 cup at a time

  7. 7

    mix in coconut

  8. 8

    in another bowl, beat egg whites until you have stiff peaks

  9. 9

    gently fold in egg whites by making a figure 8 pattern

  10. 10

    spoon batter evenly into the 3 pans

  11. 11

    bake until light brown about 30 to 40 min

  12. 12

    cream ingredients for icing: cream cheese, butter, buttermilk, vanilla, creme de cacao, and powdered sugar
