  • 10 lbPork butt
  • 1/2 cupChopped Fresh Sage
  • 1/3 cupFresh Chopped Thyme
  • 3 tbspFresh Chopped Rosemary
  • 2 1/2 tbspFresh Ground Black Pepper
  • 3 tbspKosher Salt
  • 2 1/2 tspFresh Ground Nutmeg
  • 1 tspCayenne Pepper
  • 3 tbspDry Sage Leaves

Steps

  1. 1

    Cut pork into strips

  2. 2

    Chill in freezer for 30 minutes

  3. 3

    Mix all ingredients together, disperse herbs throughout the pork

  4. 4

    Grind pork through course or medium plate

  5. 5

    Let ground mix rest in fridge for 60 minutes

  6. 6

    Make patties or stuff into casings and freeze

  7. 7

    will last fresh in fridge for three days or freeze for up to four months
