4 servings

1/2 cupself rising cornmeal mix
1/2 cupseasoned fine, dry breadcrumbs
1/2 tsppepper
4skinned and boned chicken breasts
1 largeegg beaten
1/4 cupvegetable oil

Combine first three ingredients in a shallow dish. Dip chicken in egg, and dredge in cornmeal mix.

Cook chicken in hot oil in a large skillet over medium-high heat 3-5 minutes on each side or until done.
