Ingredients

4 servings
  • 1/2 cupself rising cornmeal mix
  • 1/2 cupseasoned fine, dry breadcrumbs
  • 1/2 tsppepper
  • 4skinned and boned chicken breasts
  • 1 largeegg beaten
  • 1/4 cupvegetable oil

Steps

  1. 1

    Combine first three ingredients in a shallow dish. Dip chicken in egg, and dredge in cornmeal mix.

  2. 2

    Cook chicken in hot oil in a large skillet over medium-high heat 3-5 minutes on each side or until done.
