2 1/2 tbspunsalted butter
10 ozbaby spinach
2 mediumleeks
2 largegarlic cloves
1/4 cupdry white wine
1/2 cupheavy cream
1/2 tspcoarse salt
1/4 tspground pepper
1 pinchnutmeg
2 tbspgrated parmesan
24 ozhalibut fillets
2 tspolive oil

From relish.com: Preheat oven to 400°F

Wilt spinach in skillet, set aside. Cook leeks in butter, add wine and reduce. Add cream to simmer, then salt. pepper , nutmeg, parmesan, and reserved spinach.

Bake halibut 10 mins in parchment, serve with spinach mixture.
