for gravy mix, in canola oil, add flour and cook for five minutes until flour is golden

add two cups milk and whisk so no lumps. add one tblespn chopped thyme

simmer until thickens for five minutes

in pan, brown crumbled sausage for gravy

whisk one cup milk and egg

in another bowl, add half cup flour plus qurter cup of cornmeal, tspb of paprika, half tap of cayenne, salt and pepper

coat steak in flour mixture, shake off excess. put in egg mixture then return to flour mixture

fry over medium high heat in canola oil. put on paper bag

add sausage meat to gravy mixture

put gravy over steak
