mixed this lil recipe up and it was delicious! also great for leftover night. :)

»cut peppers in half and de seed. Lightly oil the bottom of a casserole dish and put peppers in upside down lightly oil the tops. Bake for 20-30 mins at 400°
»brown meat and drain if using hamburger. Add taco seasoning and water. Add all onion, tomato, beans, corn and salsa (if you use jalapenos do it now). Heat it up and add rice. Season with the other seasonings to your liking.
»take bell peppers out and flip them over and stuff with the filling. Top with cheese. Bake again until cheese is melted. Garnish with lettuce, chopped onion, tomato, guacamole, sour cream, tortilla chips...whatever you like.
There will be quite a bit of filling left over so you can adjust it to the amount you need. I used not quite a whole can of beans and only 1/2 cup of rice and it was still a lot...but I only made 3 so I'd say it would maybe make like 6-8 idk. But if you like to re purpose leftovers like I do to save money you can use the leftovers in something else.
