Ingredients

  1. 3chicken breats
  2. 1olive oil, use as desired
  3. 1/4onion, finely chopped
  4. 1/2jalapeno, finely chopped
  5. 1bell pepper, chopped
  6. 3 clovegarlic, chopped
  7. 1Lawry's garlic salt, as desired
  8. 1salt, as desired
  9. 1black pepper, as desired
  10. 1 candiced tomato
  11. 8cubes chicken boullian
  12. 1/2 gallonwater
  13. 1 cupfresh spinach, chopped
  14. 1/2 boxBarilla fideo pasta

  1. 1

    Put chicken to boil.

  2. 2

    Chop bell pepper, onion, jalapeño, garlic.

  3. 3

    Combine water and chicken boullioin cubes in stockpot on medium heat.

  4. 4

    Heat skillet with olive oil. Add onion, jalapeño, and bell pepper. Cook until onion is translucent. Sprinkle with garlic salt. Add garlic.

  5. 5

    Put diced tomatoes in food processor for 3 seconds. Add tomato to jalapeño mixture.

  6. 6

    Sprinkle jalapeño tomato mixture with desired amount of garlic salt, salt, and pepper. Simmer for 5 minutes.

    Add jalapeño tomato mixture to chicken stock. Leave on medium heat.

  8. 8

    Heat skillet used for tomato mixture with olive oil. Once heated, add fideo pasta. Brown pasta and add to soup stock.

  9. 9

    Keep skillet heated used for pasta. Shred boiled chicken into large chunks and add to skillet. Sprinkle with garlic salt and add a couple spoonfuls of soup stock.

  10. 10

    Allow chicken to simmer for 5 minutes. Combine with soup mix and wait until noodles are ready.

  11. 11

    Once noodles are ready, soup can be eaten immediately or let sit for 10 minutes for a thicker caldo.
