Peanut Butter Blossoms

Steps

Sift together flour and baking soda. Set aside.

In another bowl, beat butter and peanut butter until light.

Gradually add brown sugar and sugar to butter mixture. Beat well.

Add egg and vanilla. Beat until very light.
- 5
Gradually add dry mixture. Mix well.
- 6
Form into small balls. Roll in granulated sugar.
- 7
Place in mini muffin tins. Bake at 375°F for 8 minutes.
- 8
Remove from oven, place peanut butter cups in each cookie, pressing down firmly.
- 9
Return to oven and bake for an additional 2-5 minutes.
