prosciutto - wrapped Shrimp with Arugula Salad

Ingredients

  1. 1 tbspolive oil
  2. 2 tspolive oil
  3. 1 smallclove garlic
  4. 1 pinchsalt
  5. 1 pinchpepper
  6. 4 cupBaby arugula
  7. 8raw jumbo shrimp
  8. 4thin slices prosciutto cut in 1/2 length wise

Cooking Instructions

30 mins
  1. 1

    whisk 1 Tbs oil, lemon juice, garlic, salt and pepper in a bowl.

  2. 2

    peel and Deven shrimp, leaving tails. Pat dry and sprinkle with pepper. wrap 1 piece prosciutto around each shrimp.

  3. 3

    heat remaining oil in large non stick skillet over med - high heat. add shrimp and cook about 4 minutes. serve shrimp with Arugula Salad.
