Ingredients

  • 2 tbspButter
  • 1 cloveGarlic
  • 6Artichokes from jar
  • 3 ozSpinach frozen and squeezed dry
  • 3/4 cupWhite wine
  • 3/4 cupWater
  • 2 tspLemon juice
  • 1 tbspCorn starch (I used arrowrot)
  • 1 tspFresh ground pepper
  • 12 ozMonterrey jack cheese
  • 3 ozGrated Parmesan cheese
  • 4 ozFeta cheese

Steps

  1. 1

    Sauté garlic, artichokes and spinach in butter for 2 minutes. Place rest of ingredients in vitamix in order and select variable 1. Add the rest. Blend on high for 3-4 minutes until mixture is warm and smooth pour into fondue pot.
