  1. 3 tbspOlive oil
  2. 2 tbspred wine vinegar, Kosher salt, and black pepper
  3. 6 cupWatercress, thick stems removed
  4. 1/2 lbwax beans, trimmed and sliced on the bias
  5. 1/4 smallred onion, thinly sliced
  6. 15 1/2 ozcan chickpeas, rinsed
  7. 3 ozricotta salata, crumbled
  8. 1/2 cupchopped roasted almonds, Crusty bread, for serving

  1. 1

    Whisk together the oil, vinegar, half teaspoon salt, and 1/4 teaspoon pepper in a large bowl.

  2. 2

    Add the water cress, wax beans, onion, chickpeas, ricotta salata, and almonds and toss to combine. Serve with the bread.
