My lovely neighbour offered to bring some plums and, although I would have loved making some jam, I opted for a fruity cake for the morning coffee.

My lovely neighbour offered to bring some plums and, although I would have loved making some jam, I opted for a fruity cake for the morning coffee.

Ingredients

  1. 150 gramsbutter
  2. 150 gramscaster sugar
  3. 3eggs
  4. 100 gramsplain flour
  5. 1 tspbaking powder
  6. 80 gramsdesicated coconut
  7. 40 gramschopped walnuts
  8. 400 gramsvictoria plums quartered

Cooking Instructions

    Mix butter and sugar in bowl until light and fluffy. Beat in eggs gradually.

    Sift flour and baking powder to previous mixture. Add coconut and walnut pieces.

  3. 3

    Spoon mixture into greased and lined cake tin.

  4. 4

    Scatter stoned quartered plums on top.

  5. 5

    Bake at 180 C for 40-45 minutes. Cool in the tin for 15 minutes then turn to wire rack to cool completely
