Ingredients

  1. 1 cuporganic whole wheat flour or gluten free baking mix
  2. 1 tsp.Baking powder
  3. Pinchsalt
  4. 1 cuporganic cane sugar
  5. 1/2unsalted butter
  6. 2 tbsp.Fresh lemon juice
  7. 1/4 cupplain yogurt
  8. 2eggs
  9. 1 tbsp.Pure vanilla extract
  10. 2 tbsp.Cinnamon sugar
  11. 1/2 tsp.Lemon zest
  12. 7-8big plums, halved and pitted

Cooking Instructions

    Heat oven to 350°F

    Whisk together flour, baking powder and salt in a medium bowl

    In the large bowl, cream butter and sugar with electric mixer until fluffy and light.

    Add the eggs, one at the time and scraping down the bowl

  5. 5

    Add lemon juice and mix until combined

  6. 6

    Add yogurt and dry ingredients. Mix until just combined

  7. 7

    Spoon batter into slightly greased 9-inch springform pan and smooth the top.

    Arrange plums, skin side up, all over the batter. Sprinkle top with cinnamon sugar

    Bake until cake is golden and a toothpick inserted into a center of the cake comes out dry, about 50-55 min

  10. 10

    Let cake completely cool down before serving
