Preheat oven to 350°F

Wrap the outside of a 10" springform pan in foil, creating a water-tight seal.

In a large mixing bowl, combine cheeses, sugar, and vanilla paste and extract.

Add eggs one at a time, mixing well after each addition.

Add milk and combine thoroughly, making sure there are no lumps.

In a separate bowl, whip the cream, and add sugar and vanilla paste and extract.

Fold whipped cream into cheesecake mixture.

Pour mixture into pan.

Set pan in a large roasting pan and pour in enough water to come halfway up the sides.

Bake for about 1 hour, or until edges are set and center is only slightly wobbly.

Allow to cool completely

Serve with your favorite topping
