Ingredients

  • 2Eggs
  • 1 tspVanilla extract
  • 2 cupApplesauce, unsweetened
  • 1Banana, mashed
  • 1/2 cupHoney
  • 5 cupOld fashioned Rolled Oats
  • 2 tbspChia seeds
  • 1 tbspApple Pie Spice
  • 3 tspBaking powder
  • 1 tspSalt
  • 2 1/4 cupMilk
  • Filling/Topping Ideas
  • 1Cranberry/Almond
  • 1Cranberry/Chocolate Chips (White, Milk or Dark)
  • 1Cherry/Almond
  • 1Blueberry
  • 1Peanut Butter/Chocolate Chips (White, Milk or Dark)
  • 1Peanut Butter/Jelly
  • 1Raspberry/Chocolate Chips (White, Milk or Dark)
  • 1Apple Cinnamon
  • 1Apple Honey
  • 1Blueberry/White Chocolate Chips
  • 1Pumpkin

Steps

    Preheat oven to 350

  2. 2

    Mix eggs, vanilla, applesauce, banana and honey together in a bowl

  3. 3

    Add in oats, chia seeds, apple pie spice, baking powder, salt and mix well.

  4. 4

    Finally pour in milk and stir until combined.

  5. 5

    Spray a muffin tin with baking spray or use cupcake liners. Pour mixture evenly into muffin cups. If using fillings, fill halfway add fillings. Cover with remaining mixture one at a time and then add toppings, so you can tell them apart.

  6. 6

    If using fresh or frozen fruit, drop right into batter.

  7. 7

    Bake 30 minutes or until toothpick in center comes out clean

  8. 8

    Cool and enjoy or freeze in freezer bags.

  9. 9

    Keep in fridge for enjoying throughout the week. Reheat 45-60 seconds.

  10. 10

    If frozen, remove from freezer the night before you want them and leave in fridge. Then reheat next day 45-60 seconds
