Fennel and Garlic Salad

Fennel is a highly aromatic vegetable/herb that can add a little excitement to any salad. In this salad I pair the fennel with the strong flavours of garlic, spring onions and peppery radishes. The dressing has a bit of a kick.

Fennel is a highly aromatic vegetable/herb that can add a little excitement to any salad. In this salad I pair the fennel with the strong flavours of garlic, spring onions and peppery radishes. The dressing has a bit of a kick.
Steps

Slice the garlic

Start gently frying the garlic over a medium heat in a little oil

While the garlic is cooking start preparing the salad vegetables, cut the cucumber into wedges
- 4
Remove the outer layer of the spring onions, then chop into rings
- 5
Roughly slice the fennel
- 6
Finely slice the radishes
- 7
By now the garlic should be starting to brown a little.

Make a dressing, by combining the oil, vinegar, cooked garlic, chili powder, wholegrain mustard and a little salt and pepper.

Combine the salad with the dressing until the salad is nicely coated.
