Ingredients

  1. 8sweet potatoes
  2. 1 cuppecan pieces
  3. 1½ cup coconut flakes
  4. 3Tbsps. butter
  5. 1½ cup Brown Sugar – approximately – depends on sweetness of potatoes

Cooking Instructions

    Peel and chop potatoes.

    Place in a heavy pot and cover with water. Boil until potatoes are soft.

  3. 3

    Taste, then add appropriate amount of brown sugar depending on sweetness of potatoes.

    Spread potatoes into baking dish sprayed with non-stick cooking spray.

  5. 5

    Sprinkle chopped pecans and coconut over the top

  6. 6

    Bake at 400°F until coconut begins to brown.
