Ingredients

  • 5ripe tomatoes
  • 1onion, chopped
  • 1 smallcan tomato paste
  • 1/4 cuptomato sauce (no ketchup please)
  • pinchbasil
  • olive oil
  • 1 tbspbrown sugar
  • salt and pepper

    bring the onion and oil in a medium pot to simmer on the stove top.

  2. 2

    Remove the top part of the tomatoes where the stems where, quarter them, add brown sugar(sugar brings out the taste of the tomatoes), salt and pepper.

  3. 3

    Cook the onions till translucent then add the tomatoes and put the lid on the pot.

    Leave covered on low heat until the tomatoes are cooked soft, use a fork/masher to break up and mush the tomatoes

  5. 5

    Add the tomato paste, tomato sauce and basil to the pot and mix well, leave to simmer for a additional 10-20min.

  6. 6

    Sauce can be left to simmer until ready to serve, just stir occasionally. Serve with your favourite pasta dish. If you want hotter version remove the basil and add a chopped chillie or a table spoon of dried chilli pieces to the onions when cooking them soft, also add a teaspoon of hot sauce when you add the tomato paste.
