Ingredients

1 hour 30 mins

  1. 1 lbWild caught Salmon
  2. 1 packagesskewers/long frill pics
  3. 1 1/2 cuppickled Capers
  4. 1 bunchfresh dill
  5. 1 eachlemon
  6. 2 cupcrema /sour cream/creme Fraiche
  7. salt n pepper

  1. 1

    Salt pepper and juice the lemon and zest it then put some of each on top of the salmon and let it sit in the fridge for an hr.

  2. 2

    Make up your dip with your crema some lemon juice capers dill and zest

  3. 3

    Then cut up the salmon into cubes about 2 inches by 1 inch then skewer them line up on a sheet pan cook off at 350°F for about 15 min do not over cook.

    Let them cool just a bit before putting them on a tray with the dip

I'm a Chef now after being in the Bar business for over 30 yrs. I always loved cooking for my family and friends and I got my cooking chops at the Hilton hotel in Odessa,TX about 23 yrs ago when I volunteered to help out in the kitchen after our staff walked out on a strike! In one week I was offered a position to be his apprentice and recited my Certificate in 11 months! I went on to do catering for the next 18 yrs!
