Carrot Cake Pie

I love carrot cake, period. So why not carrot cake pie? Sometimes you just have to try things. This is one of those things.
A carrot cakeish filling, with a cream cheese semi-whipped topping.
I didn't have any powdered sugar, so take some regular sugar, run it by itself, in blender, until it's powder. 10 seconds at most.
This a very nice, pie, i truly think you will enjoy it.
My wife loved it, and keeps bugging me to make it more often, but we don't need sweets 😊

Ingredients

8-10 servings
  1. Pie
  2. 1 (9 inch)pie crust
  3. Dry ingredients
  4. 1 cupflour
  5. 1/8 tsp.Baking soda
  6. 1/2 tsp.Baking powder
  7. 1/4 tsp.Salt
  8. 1 tsp.Cinnamon
  9. 1/8 tsp.Ginger (powder)
  10. Wet ingredients
  11. 1/4 cupmelted butter
  12. 1 cupsugar (brown if you have it)
  13. 1 tsp.Vanilla
  14. 1egg
  15. 1 cupshredded carrots (about 2 medium)
  16. Topping
  17. 4 ouncescream cheese
  18. 1Tbl. Butter
  19. 1/2 tsp.Vanilla
  20. 1/2 cuppowdered sugar
  21. 1/2 cupcold heavy whipping cream

Cooking Instructions

    Preheat oven to 350F

    Make your pie crust 😉 Typically a regular pie crust is used, but the rebel I am made me go with graham this time. I think this was a great choice.

    Combine all the pie dry ingredients in a bowl (small to medium is fine)

    Mix the dry thoughly

    In a larger bowl, cream the butter with the sugar

    Add an egg and mix it in, don't over mix.

    Add your dry, to your wet, and mix thoroughly.

    Shred your carrots, this is the size I used, 2

    I just used my food processor to shred them, gave me just a hair over 1 cup.

    Fold the carrots into the filling

    Carefully place the filling in the crust, it's thick, even out without damaging your crust. Place in oven for 25-30 minutes, until a toothpick comes out with but a few crumbs.

    Let cool, then refrigerate. It's best to do the topping with it really cold.

    In a bowl, mix cream cheese and butter together

    Add vanilla and sugar, mix

    Add heavy cream

    Mix until stiff

    Now you can get fancy and use a pastry bag, and make rows, or, just spread out on top

    This is a little on the sweet side, so smaller pieces are suggested.

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
