Ingredients

10 servings
  1. 1 lbMacaroni noodles
  2. 4 cupMilk (any type)
  3. 6 tbspUnsalted butter
  4. 6 tbspFlour
  5. 3/4 lbAged Gouda cheese, grated
  6. 1Salt & Pepper to taste
  7. Caramelized Onions
  8. 3 tbspButter
  9. 2 tbspOlive oil
  10. 2 1/2 lbYellow onion, thinly sliced
  11. 1Salt & Pepper to taste
  12. 2 tspSugar

Steps

  1. 1

    Caramelizing The Onion
    Heat butter and olive oil in a large skillet
    Add onions, salt, and pepper
    Stir constantly until onions begin to soften (about 5 min)
    Add sugar
    Cook until golden brown (about 20 min), stir frequently

  2. 2

    Preheat oven to 350°F

  3. 3

    Add pasta to a large pot of salted boiling water, cook until al dente (about 10 min)

  4. 4

    Meanwhile, melt butter in a large saucepan over med. heat

  5. 5

    Add flour, stir constantly for 3 minutes

  6. 6

    Heat milk in the microwave

  7. 7

    Stir in hot milk, 1/4 cup at a time. Continue until it comes to a simmer

  8. 8

    Remove from heat and add most of the cheese (at least 3/4 of it), stir until melted

  9. 9

    Add salt and pepper

  10. 10

    Combine caramelized onions, pasta, and cheese sauce to a greased 9x13 backing dish

  11. 11

    Sprinkle the remaining cheese on top

  12. 12

    Bake until golden and bubbling, about 40 minutes
