Another 'store cupboard' recipe. Use any beans/veg to mix with the couscous to make a delicious filling and tasty salad. Enjoy hot or cold!

Ingredients

  1. 1 cupUncooked plain couscous
  2. 1/2Veg stock cube
  3. Left over veggies. This recipe:
  4. 1 canBlack beans
  5. Cauliflower - pre roasted
  6. Pineapple - preroasted
  7. Peas
  8. Sweetcorn
  9. Red cabbage
  10. Cumin
  11. Baby spinach

Cooking Instructions

20 mins
  1. 1

    Mix 1/2 stock cube with hot boiled water and add to couscous. Leave to soak then fluff

  2. 2

    In pan saute garlic and onion in a little water then throw in all chopped veg

  3. 3

    Add black beans, cumin, soaked coucous and baby spinach

  4. 4

    Heat through and serve
