My sister used to make this quick and easy dish in college because of the inexpensive ingredients. When she first made it for me, I was slightly repulsed by the unusual ingredient combination... but I gave it a try and was pleasantly surprised by how delicious this recipe is. It has become one of my favorite comfort dishes. Enjoy!

Ingredients

  1. 2 cloveFresh Garlic, Minced
  2. 1/4 cupChopped Fresh Parsley
  3. 3 tbspExtra Virgin Olive Oil
  4. 1/2 boxwhole grain linguine, or whatever pasta you have on hand
  5. 1/2 tspSalt
  6. 1/4 tspPepper
  7. 1/2 cupGreen Sun Dried Raisins
  8. 2 canAlbacore Tuna, water packed
  9. 1/2 cupShredded and Aged Parmesan Cheese

    Boil water for pasta, prepare as directed on box, al dente preffered...

  2. 2

    Once water is boiling, add pasta and 1 Tbsp of Extra Virgin Olive Oil. Stir occasionally.

  3. 3

    While pasta is cooking, prepare sauce. In medium frying pan add 2 Tablespoons of Olive Oil. Add garlic and saute for 2 minutes.

  4. 4

    Next, add 2 Cans of Tuna, water included.

  5. 5

    Add raisins, Parsley, salt and pepper.Stir well and continue to saute for 7 +/- minutes until Raisins are softened and all ingredients are gently heated.

  6. 6

    Strain pasta once cooked. Place serving on plate. Top off with a 1/4 of the Tuna sauce.

  7. 7

    Generously Sprinkle Parmesan Cheese over all. Garnish with a Sprig of Fresh Parsely and Enjoy!
