Ingredients

8 servings
  1. 1 1/2 lbnew potatoes (thin skins)
  2. 3 eachshallots
  3. 4 clovegarlic
  4. 1chicken broth
  5. 6boiled eggs
  6. 3/4 cupmayonnaise
  7. 1/3 cupspicy or dijon mustard
  8. 1sweet pickle relish (to taste)

Cooking Instructions

  1. 1

    Cut potatoes into 1 " cubes or smaller; thinly slice shallots; remove skin from garlic and smash them slightly

  2. 2

    Place Step 1 ingredients in sauce pan and cover with chicken broth; boil over medium heat until potatoes are tender

  3. 3

    While potatoes are cooking, mix together mayo, mustard and relish.

  4. 4

    When potatoes are done, drain broth and add mayo mixture slowly. Don't make it to wet.

  5. 5

    Add peeled and coarsely chopped boiled eggs to potato mixture and add more mayo mix if needed

  6. 6

    Serve warm.
