Roasted Peanuts or Njugu Karanga as we call them locally are the best snack that you need to have to sort that craving. I love cooking my own peanuts because they turn out great and I can trust that they are well cooked. Roasting peanuts need patience up to even an hour because you cook on really low heat. This is to make sure that they are evenly cooked without being burnt yet raw on the inside. Hope you enjoy my "njugu karanga" recipe!

Njugu karanga (roasted peanuts)

Ingredients

4 Cups
  1. 4 CupsRaw Groundnuts/Peanuts
  2. 1 CupSalt
  3. 3/4 CupWater

Cooking Instructions

    Heat a heavy bottomed skillet/pan. Add the raw peanuts into the heated pan. Add water.

    Add Salt

  3. 3

    Stir well until all the ingredients are completely combined. It will form a paste like mixture as the salt coats the raw peanuts

  4. 4

    Start to vigorously stir the raw peanuts on the medium high heat until the salt starts to fall off the peanuts

  5. 5

    Continue to stir and you will notice all the salt has separated from peanuts and gone to the bottom

    Once you start to hear a crackling sound, then you will know the peanuts are almost done. Keep stirring at intervals and letting the peanuts cook

    Take one peanut and squeeze between your fingers. If the skin effortlessly comes off then cook further for a few more minutes

    Keep checking how fast the skin comes off the peanut by squeezing the skin off. Taste and if the peanut is crunchy when you bite into it, then it is ready to come off the heat

    Remove from heat and pour into a metal serving dish or tray and spread out the peanuts. Leave for 15 minutes until the crackling stops

    Perfectly roasted peanuts!
